
First course: Steamed fiddleheads (Holbrook Farm) with a horseradish mayo. The recipe was based on one I found in my Epicurious iPhone App.
Second course: Sliced, boiled beets (Holbrook Farm) over arugula (Holbrook Farm) with goat cheese (via Holbrook Farm), toasted walnuts and sliced onions. I simply drizzled a little red wine vinegar, extra virgin olive oil, salt and pepper over the top.
Third course: grilled lamb chops (not local, but organic, grass-fed from Rocky Mountain Organic). With quality meat you don't need to do much. We just sprinkled on a little garlic salt and pepper. Delicious! I must admit I am a sucker for the crispy fat on lamb chops and these were perfect thanks to my grill-master husband.
It was a perfect day finished with a perfect meal that was easy, light & fresh.
