Girl Scout cookies. They taste so darn good (just savor the delicious nostalgia don't read the ingredients). As a former Brownie and Girl Scout, those cookies do have a special place in my heart. So, I might need to visit Parallel Post in Trumbull because they have teamed up with the Girl Scouts of Connecticut for some serious limited-time-only delectable desserts.

For the first time in Parallel Post’s history, an exclusive dessert menu will be prepared with Girl Scout Samoas®, Thin Mints®, Do-Si-Dos®, and Trefoils®. To commemorate the kick-off of the 2015 Girl Scout Cookie season, Parallel Post’s Executive Chef Chris Molyneux and Pastry Chef Madelyn Rendon teamed up to conceptualize and perfect recipes to best accentuate the unmatched sugar, chocolate, caramel, coconut and mint flavorings of select Girl Scout Cookies. These desserts will only be available from January 29th through February 28th.

Parallel Post is thrilled to debut their limited-time-only dessert menu featuring the iconic Girl Scout cookie collection by working together with Girl Scouts of Connecticut.

“We are delighted that Parallel Post has conceptualized our cookies in such an original way,” “We are especially honored for their support in purchasing these cookies from our girls as they continue with this special dessert menu through February. Those dining at Parallel Post will not only get a sweet treat, but will learn more about what the Cookie Program gives girls – the skills she needs to thrive, succeed, and become a young entrepreneur,” said Mary Barneby, CEO, Girl Scouts of Connecticut.

The exclusive Girl Scout Cookie-inspired dessert options include the Raspberry Swirl Cheesecake made with Trefoils® Girl Scout Cookies, a raspberry infused cheesecake with a Trefoils® crumb crust; Trifle made with Samoas® Girl Scout Cookies, a layered white chocolate custard garnished with Samoas®, whipped cream and a dash of chocolate sauce; and the Banana Cream Pie made with Do-Si-Dos® Girl Scout Cookies, an old-fashioned favorite dessert prepared with a Do-Si-Dos® pie crust topped with vanilla whipped cream and sprinkled with toasted coconut flakes. A fourth option for those seeking a lighter treat can cool off with the Ice Cream Sundae made with Thin Mints® Girl Scout Cookies, a vanilla bean ice cream sundae sprinkled with chopped Thin Mints®.

Sounds sweet to me! Now I feel nostalgic. If only I could find the badge-filled sash from my Brownie uniform ...

  1. Could not have asked for a better venue to have held our event. Everything was impeccable - from the event coordinator to the food to the service.
